Serves 4-6



  • 2 large sweet potatoes
  • Olive oil to brush on the flesh
  • 8 strips maple smoked bacon
  • 1 tbsp butter
  • 1 yellow onion, thinly sliced
  • 2 tsp brown sugar
  • 1/4 can (4oz) EH? Light Beer
  • 2 tbsp maple syrup


Step 1 – Preheat oven to 350oF. Line a large baking sheet with aluminum foil. Wash potatoes and pat dry. Brush flesh with a little bit of olive oil. Place on baking sheet. Place in oven

Step 2 – Cook bacon until browned and crisp, about 6-8 minutes. Transfer to a paper towel lined plate. Cool completely. Chop into small pieces

Step 3 – Once the potatoes are cooked (you can easily insert a fork into them), remove from oven and cool for 5-10 minutes. Cut in half and scoop out the inside and discard of the flesh

Step 4 – In a large skillet over medium-low heat, melt 1 tablespoon butter. Add sliced onions and brown sugar; stir occasionally, until the onions caramelize and turn a deep golden brown, about 10-12 minutes. Add EH? Light Beer and cook 2 minutes. Add maple syrup. Stir well and cook 3-4 minutes. Add potatoes and bacon to skillet, allow for potatoes to heat to serving temperature, stirring constantly, remove and serve immediately
