Serves 6-8



  • 5 cups vegetable oil
  • 1 cup all-purpose flour
  • 1⁄2 tsp baking powder
  • 1⁄2 tsp chili powder
  • 1⁄4 tsp salt, plus additional for seasoning
  • 1/2 can (8oz) 1 cup EH? Light Beer
  • 1 egg, separated
  • 1 pound small mushrooms
  • Dash of black pepper


Step 1 – Heat oil in large saucepan until gently bubbling (not boiling). Mix flour, baking powder, chili powder, salt and pepper in medium bowl. Whisk EH? Light Beer and egg yolk in small bowl

Step 2 – Beat egg white in medium bowl with electric mixer at medium speed until soft peaks form. Stir beer mixture into flour mixture just until blended. Fold in egg white

Step 3 – Dip mushrooms into batter in batches and carefully place in hot oil. Fry mushrooms, turning occasionally until golden brown. (Stir batter and allow oil to return to gently bubbling between batches.) Remove mushrooms to paper towel covered plate; immediately season with additional salt. Serve warm
